It's August now and the growing season should be slowly winding down. Thankfully it's gotten a bit cooler and my garden has gotten it's second wind. I have a ton of various types of tomatoes growing, the peas have finally started to grow and I've picked my 4th cucumber. And yes we have many more zucchinis in the garden. I think by the end of the summer I will not want to see another zucchini for a very long time. I made a new recipe, stuffed zucchini boats. You scoop out the seeds and some of the flesh with a melon baller, par boil the zucchini sections and cook the ground meat, onion, rice and left over zucchini flesh. At the end, add tomato sauce and place the mixture into the zucchini boat and cook in the oven at 400 degrees for 45 minutes. YUM!!! It was good. You can even top it with a little grated cheese if you want.
